Alexander Vargas has been in the world of coffee farming and production for most of his life, and when he and his wife decided to acquire the La Piragua farm, specialty was the name of their game. Processing and fermentation is one of the things which has given the Vargas’ their edge and this natural Colombia is a great example of one, with notes of dried plum, cacao nibs, and cherry.
Grown at 1850masl in Palestina’s Los Olivos area, this particular coffee is a Red Bourbon variety - but the farm also cultivates Gesha, Java, Pink Bourbon, and Caturra. Alexander started out as a coffee picker, and for several years toiled on others’ farms before La Piragua, and this close contact knowledge has helped produce some interesting results.
